Although the hotel exuded luxury, every aspect was thoughtfully aligned with sustainability principles. Each material appeared carefully chosen, from the cake and cookies in the room to the natural servingware, embodying sustainability and attention to detail. The handwritten notes and sprigs of rosemary added a touch of elegance and refinement. What stood out most was the subtle and natural implementation of these elements, avoiding any display or overt emphasis on sustainability to the guests.

This is a truly remarkable property, meticulously detailed and lovingly cared for and maintained. It's not a property that necessarily photographs well, as the expanses are broad and IG favors tighter frames. Every surface is high quality, from the cobbled pavements to the wall surfaces. The decoration is 'modern farmhouse' and is sparse, but still with warm touches. The food is delicious and reasonably priced. The horse stable is the cleanest I've ever seen - and I guess it needs to be, since it's so close to the restaurant. Benjamin does a great job with the horses - I had the pleasure of riding up to the Monsaraz castle with him one morning. Ricardo from guest services gave us a walking tour of the property and a jeep ride - he is very knowledgeable and enthusiastic. The staff in general were great. The property is beautiful - olive trees that are hundreds (some of them thousands) of years old, a menhir that is at least 6000 years old. Now, for just a few notes: -Breakfast service needs improvement. Our first morning, we ordered a cappuccino, a black coffee and a tea. It took so long for them to arrive that we had almost finished our meals by the time they came. The second morning, no one came to take our food order. We ate from the buffet and decided that was enough food (someone asked us for our food order as we were about to leave) -Tipping: please explain the tipping policy in advance. There is an 8% service charge added to the restaurant. This is unusual in Europe. As a guilt-laden American, we are primed to over tip - I suggest you tell guests upon check in that you are going to put this charge on the bills and that any additional amount is optional. Otherwise, we are left guessing at what is reasonable since the standard in Europe ranges anywhere from leaving spare change to 5% to 10%. We ended up doubling the 8%, leaving 16% every time.
